hatching the eggs-
1) Figuratively. This means that two or more people can devise a secret plan in doing something
sometimes good ,sometimes bad.
Example:- Your two children get together in private to plan buying you a birthday present.
You catch them quietly discussing the plan and
you ask:- What eggs are you hatching ?
I hope this explains.
Let me know how to put in above passage?
many thanks

NOW I get it!
Just drop that from the sentence entirely. Since it means "plan a surprise" and you say right after it "to surprise me", you can simply state " . . . healthy recipes to surprise me . . . "

It would be better if you simply said:
"My hubby of 14 years is trying his hand at preparing delicious meals from your simple, healthy recipes to surprise me after my long and tiring work day."
