How many plants can be eaten safely?

this question is practically impossible to answer. almost any plant can be eaten safely if prepared properly, for example, or eaten in small enough quantities. Also, parts of a plant may be eaten safely, while other parts are harmful... so does it count if you can eat the root, but not the leaf?
